My Favorite Christmas Cookie {Blogmas 2014}

I mentioned yesterday that Christmas was really fun for me growing up. Many of my childhood memories involve food, and Christmas is no exception! My mom makes several different kinds of special cookies at Christmas that are my favorite even today. She bakes dozens of each kind and then fills Christmas tins with a variety of cookies. I am always happy to see those tins come out after we’ve finished a holiday meal. 🙂

You can find a post with most of her famous Christmas cookie recipes here, but the ones that are my favorite have to be her Raspberry Jam Shortbreads. They are just so soft and sweet and Christmasy! She makes shortbread cookies, and then sandwiches two together with a raspberry filling and drizzles the top with confectioners sugar icing. Yum!

Here’s a quick peek at some of the cookies my Mom makes at Christmas. Don’t those look amazing?

Raspberry Jam Shortbreads
1 Cup shortening
1/2 Cup sugar
1/2 Cup brown sugar
2 egg yolks
3 Tbl. milk
2 tsp vanilla
2 2/3 cup flour
2 tsp cream of tartar
1 tsp soda
1/2 tsp salt
1/2 Cup Raspberry jam

Cream shortening and sugars; add egg yolks, milk, vanilla and beat well.  Sift together dry ingredients, add to creamed mixture.  Chill dough one hour.  On well-floured counter, roll half the dough into 1/8 inch thickness.  Cut with 2″ round cutter.  Cut small hole in centers of half the cookies.  Bake on ungreased cookies sheet at 325 degrees, 10-12 minutes or until lightly browned.  Spoon 1/2 tsp jam on plain cookie; top with cutout cookie.
Makes 3 1/2 dozen.

  1. My boyfriends grandma is the same way as this and so is his mom! I get together with her every year and make like 9 different kinds of cookies including those nut cookies your mom makes! It’s exhausting but such a fun tradition.

  2. Yum!! It looks like you and your sis had a lot of fun making Christmas cookies together this year. I am heading home for Christmas a little earlier this year so I told my sister to pencil in a cookie date, too! The holidays are such a fun time of year.
