I love good food – cooking it and eating it. But on weeknights, I want something that’s quick, budget friendly and uncomplicated. I love recipes that meet those criteria while still tasting delicious! My recipe for BBQ Turkey Cups is a great weeknight recipe that I grew up eating and still love today. This recipe can be ready even more quickly if you already have browned meat on hand!
BBQ Turkey Cups
- 3/4 lb. ground turkey or beef, browned and drained
- One can of biscuits
- 1/2 Cup BBQ Sauce (use more or less to your taste)
- Shredded Cheese
Preheat the oven according to directions on the can of biscuits. Lightly grease a muffin tin. Flatten biscuits and press into muffin tins to create little nests for the meat. Combine browned turkey with BBQ sauce and spoon into muffin tins. Top with shredded cheese. Bake 8-10 minutes or until biscuits are lightly browned.
I like to serve these with a vegetable and a salad. If you want to freeze these, you can. Just make sure you let them completely defrost in the refrigerator before reheating. I like to put them in the microwave for about a minute and then place in a 350 degree oven until the biscuit becomes a little toasty!

Those sound yummy and easy! I love BBQ, but have never tried BBQ ground turkey. I wonder if they’d be good with shredded pork or chicken? I think any biscuit+bbq+cheese recipe would have to be tasty. I also love the idea of a biscuit base. Smart thinking!!

I imagine pork or chicken would be really tasty as well! Paul helped me assemble the cups when I made them last week, and he made a few with just pepperoni and shredded cheese. He dipped them in Ranch and said they were really good.

I used to make something similar for my kids when they were young. It is making me want to prepare some for the grands.
