5 Minute Weeknight Sides

My favorite part of most meals is the sides. I love roasted veggies and mashed potatoes, but I don’t always have time for those kinds of dishes on weeknights. Here are two quick weeknight sides that we’ve been enjoying recently.

I love the way Applebees makes their steamed broccoli – here’s my take on their method!

Lemon Garlic Broccoli

  • Fresh or Frozen Broccoli Spears
  • Garlic Salt – about a 1/2 teaspoon per serving
  • Lemon Juice – about 1/4 teaspoon per serving

Place broccoli in a bowl (I always use my Pampered Chef veggie steamer) and add just enough water to cover the bottom of the bowl. Cover and microwave on high for 1 to 2 minutes, depending on how limp you like your broccoli. 🙂 Drain the water and toss broccoli with salt, garlic salt and lemon juice to taste. Serve immediately.

If you’ve never purchased canned whole potatoes, you have to try them! They are so inexpensive and only take a few minutes to prepare.

Buttered Parsley Potatoes

  • One can whole potatoes (I buy mine at Aldi for $.59/each!)
  • 1 Tablespoon Butter or Olive Oil
  • Parsley

Drain potatoes and place in a small saucepan over medium-high heat. Add butter or olive oil and cook until heated through. I like to let them get nice and golden brown. Top with dried parsley and salt to taste. Yum!

  1. Great ideas! I love potatoes and need to try these. Broccoli, probably not.lol I promised myself I was going to eat healthier (Read: green) when I got pregnant. Well, I started with broccoli and it wasn’t a good idea. I have this thing about texture, and as soon as those little tree tops hit the top of my mouth, I was done with the experiment.haha I bet my hubby would like them though.

  2. I love lemony veggies. It’s been a while since I’ve purchased canned potatoes – I forget how much I like them. Thanks for the reminder. I’ll have to give your veggies a try 🙂
