I love potato soup – but I’m fairly particular about it. I don’t like for the potatoes to be overcooked, mushy or grainy in texture. Over the years I’ve learned that the only way to achieve the perfect potato texture for my soup is to roast the potatoes and then add them to the soup base. I was inspired by How Jen Does It‘s recipe for potato soup using Canadian Bacon…and added that to my tried and true Roasted Potato Soup recipe! I know you’ll love it!
Also…I watched The Shop Around The Corner the night I made this recipe, so now every time I eat my potato bacon soup I’ll think of that movie. That’s not a bad thing… not only is Shop Around The Corner the “original” You’ve Got Mail, it is one of my favorite Jimmy Stewart roles. He’s as good in that movie as he is in The Philadelphia Story.
Ok, here’s the recipe. 🙂
Roasted Potato-Bacon Soup
- 3 potatoes
- 2 Tablespoons butter
- 1/2 of a small onion, diced
- 1 Tablespoon flour
- 16 oz. half & half (can use fat free)
- 1 Cup chicken stock
- 4 oz. Canadian Bacon, chopped into bite-sized pieces
- 1 Cup chopped fresh spinach (optional)
- Salt & Pepper to taste
Chop potatoes into bite-sized pieces. Toss with olive oil and salt. Roast at 425 degrees for 25 minutes, or until cooked through. In a large pot, saute onions in butter for two minutes. Whisk in the flour and cook for another minute. Add the chicken stock and allow to deglaze the pot. Add milk and bring to a simmer. Smash 1/4 of the cooked potatoes with a fork or potato masher. Add those to the pot along with the rest of the potatoes and bacon. Simmer for 15 minutes. Add the spinach and cook until wilted. Serve with shredded cheddar cheese and parsley.

Oh man. This soup. Sounds so yummy!! And I can totally leave off that bacon and never miss out. Perfect! And The Philadelphia Story!! Such a fav movie. The best combo of actors. Ever.

You got some great deals! Especially the 67¢ meatballs! That potato soup looks really good. I’ve never made a potato soup with roasted potatoes, but it sure looks delicious. We would probably skip the Canadian bacon, but I bet it would be nearly as good without.

Yum!! This looks different than any other potato soup I’ve had before and so tasty! I love You’ve Got Mail and had no idea there was an original movie it was based on. I need to see that. You’ve got a whole classic movie repertoire that I’ve never heard of before – I request a vlog or blog post on all your favorite classic gems pretty please 🙂 I just found out my hubby has never seen While You Were Sleeping so we DVR’d it and are hoping to watch it soon 🙂 Hope your week is off to a great start!

You’ve Got Mail is actually the 2nd remake of Shop Around the Corner, the other one is “In The Good Old Summertime” with Judy Garland. 🙂 #oldmovienerd I love your idea to make a vlog with my favorite classic movies…I started writing a list of my top favorites and will have to narrow it down to fit in less than 30 minutes. Ha! Thanks for the idea! I love While You Were Sleeping – that’s a great one to watch at Christmas!

Looks yummy!! And Jimmy Stewart…I love him. One of our favorite movies is Harvey. Jimmy Stewart was just hilarious in that one! I am not sure I have ever seen Shop Around the Corner. I had heard it was the inspiration for You’ve Got Mail which has to be one of my favorite movies.

This recipe sounds wonderful. My boys would love it with the Canadian Bacon, and I would love it without. Thanks for sharing! (And I agree, I’ve found that roasting the potatoes not only keeps potatoes from getting mushy, but I just like the resulting taste better, too!)
