I love this recipe because it’s quick, inexpensive and delicious! My Taco Mac & Cheese is very filling but is a great way to stretch a little bit of meat. If you’re not afraid of a little processed cheese, this recipe is for you. 🙂 I like to serve this with a tossed salad or fruit for a quick and filling supper meal!
Taco Mac & Cheese
- 1 box macaroni & cheese
- 1/2 lb. ground turkey, beef or chicken
- 1 Tablespoon taco seasoning (adjust to your taste)
- 1/2 can diced tomatoes
- 1 teaspoon Italian seasoning
Brown the meat and set it aside. Cook mac & cheese according to package directions and then place over medium low heat. Add the meat and remaining ingredients and stir to combine. Cook until everything is heated through, being careful not to overcook the pasta. Top with cilantro, parsley, sour cream or avocado.
This looks like a dish my grandchildren would love!

A neighbor a long time ago use to make this all the time. I remember it because of the box of mac and cheese she would always have on hand. Every version is a tad different.

It’s great b/c you really can use whatever you have on hand. I’ve seen people use pasta sauce instead of canned tomatoes.

Yum!! It kind of reminds me of Hamburger Helper Cheeseburger Macaroni which I love. I usually have all of these ingredients in my pantry so I’ll have to keep this in mind for an easy, tasty dinner idea.

I am making one of my favorite recipes tonight, Arlene’s Chicken Tortilla Casserole. It is pretty easy as well and it heats up well for left overs. Hey, even Martha Stewart admits that she likes Velveeta. Which I found very surprising!:)
