Believe it or not, March is nearly over! That means it’s time to share the new recipes I’ve enjoyed during the month! This month I have a main dish and a breakfast item to share with you. Here they are!
We have some variation of tacos at least twice a month, if not more. This month I wanted to make something a little more involved than just ground beef and a packet of taco seasoning, and I remembered the enchilada recipe my mom has made many times over the years – somehow I’d never made them myself! I headed over to her blog and grabbed the recipe. They are pretty simple to put together, and oh-so-delicious! I don’t care for canned enchilada sauce, and the sauce that you make for these enchiladas is so good! It made twice as much sauce as I needed, so I put the rest in the freezer and will use it the next time I want enchiladas.
This is the best time of year to purchase strawberries – and if you’re able to grab some at Aldi they are even cheaper (or if you have an Aldi in your area, you can price match them at Walmart). I had some extra strawberries that needed to be used quickly, so I tried this recipe (also from my mom’s blog) and was so pleased with these easy and delicious muffins! After they cooled completely, I put them in the freezer so I can pull out a few at a time as needed.

The strawberry citrus muffins look so good! Muffins are my weakness (especially fresh out of the oven with butter 🙂 ) & those flavors are magical together! That’s such a great idea to make a point of trying new recipes each month. I think I might try that out too; it would be nice to get out of the meal planning rut. 🙂

Those muffins are especially good with butter…they’re from Cooking Light, so I figure you can afford the extra fat in the butter. Haha!

I love recipes that make a sauce that you can freeze half of! Makes it so easy to throw together a dinner later. Yum!! And muffins – I could live on breakfast carbs for all 3 meals. It’s my favorite!!
