April’s New Recipes

It is time to share the new recipes I’ve enjoyed during the month! This month I have a quick fix main dish and a bread item to share with you. Here they are!

As I mentioned last month, I’m always looking for a variation on tacos to work into my weeknight routine. This recipe is quick and delicious – it would even be a great lunch to make at home. I used Ranch dressing instead of sour cream because that’s what I had on hand, but I am sure the sour cream would be just as yummy.

I am not good at making bread – especially anything that has yeast in it. Let me tell you, these are the easiest yeast rolls I’ve ever made – no kneading required! I’ve had this recipe on my list to try all year and finally got around to making them. The recipe makes almost two dozen, so there’s plenty to pop in the freezer for another meal! I forgot to take a picture until after we’d eaten most of them and all that was left were the smooshed ones in the bottom of the basket. Oh well!

  1. Those recipes look fantastic!

    I’ve been lazy about cooking lately, so I haven’t tried any new recipe. I did throw together something new in the crockpot the other day, but it wasn’t from a recipe. I made Beef and Noodles. I put a beef roast in the crock pot, put salt & pepper on it and 2 cans of beef broth and cooked on low for 8 hours. Then I took the broth out of the crockpot, put it in a saucepan and cooked the noodles in there and tossed it all together. I know you’re supposed to be able to cook noodles in the crockpot, but it takes longer to cook them in the crockpot than on the stove and I didn’t have enough time.
