It should come as no surprise that I enjoy cooking supper at home. Most days I spend no more than thirty minutes on supper – just because I enjoy it doesn’t mean I have hours to spend in the kitchen! I have a few recipes that are my go-to main dishes and sides when I want something delicious and quick for supper. Here they are!
Taco Mac and Cheese is a great one-pot meal! It’s filling and packed with flavor. Having cooked ground beef or turkey in the freezer makes this one even faster to get on the table. (Click the picture for the recipe)
These Buttered Parsley Potatoes are ready in less than 5 minutes! My husband is always so happy to see these on the table. I love them because they are inexpensive and don’t require any sauce, gravy or extra toppings.
I’ve been eating these BBQ Cups since I was a little girl – and I still love them! This recipe uses ground turkey, but ground beef is delicious as well.
Nachos are always a go-to meal when I’m starving and don’t want to take forever with meal prep. These are a great alternative to Velveeta or Cheese Whiz nachos, and can be made with ground beef, crab meat, refried beans…the sky is the limit!

I think you would love those BBQ cups – and yes, they are great for lunch too! Paul doesn’t care for the BBQ flavor as much, so sometimes I make a batch for his lunches using pasta sauce and white cheese instead of the BBQ and cheddar.

Quick meals are right up my alley. Thanks for the recipes, as they look delicious! The BBQ cups and parsley potatoes sound great, and nachos are so easily customizable. I tried “Totchos” earlier this year, which is tater tots topped with nachos toppings. Just bake the tots, then top away. So good! 🙂

The Totchos were tasty, but they aren’t my replacement for nachos. I’d miss the crunchiness of the tortilla chips too much! 😉 The Totchos I made tasted kind of like a Mexican loaded baked potato (topped with taco meat, lettuce, tomato, cheese, green onion, sour cream, and salsa). It was an interesting dish! 🙂

The bbq cups sound really good. I keep a homemade biscuit mix in the fridge so I’ll bet I could even make these from scratch in nothing flat.

Mmmm taco mac & cheese! I could easily adapt that to be veggie! And it might be a win-win with my Mexican food loving husband and my “cheesy noodles” loving toddler 🙂

I think it would be just as yummy without the meat! Sometimes I add in green bell peppers for extra crunch – that might “beef” it up a little. Pardon the pun. 🙂
