This Week’s Menu {and what I’m thankful for}

Happy Monday! I hope you had a great weekend and were able to stay cool wherever you were. On Friday afternoon I came home to a super hot house with a completely dead HVAC unit. I might have cried. It was one of those times where I was the only one who realized the seriousness of the situation (or so it seemed). Thankfully we discovered that it was a power issue, and thankfully our power comes from a pretty small company with amazing customer service. Within an hour of making the call, we had air again! It was not the best way to kick off the weekend, but thankfully that was the low point and things definitely went up from there.

So on this Monday, I’m thankful for working AC! 🙂 How about you? What are you thankful for today? 

It’s also Menu Monday…so here are the things I’m serving this week. Simple and oven free is the name of my game!


On The Menu 

Breakfast: 

  • Grits
  • Cereal
  • Eggs & Bacon

Lunch:

  • Leftovers
  • Deli Sandwiches
  • Tuna Salad Sandwiches

Supper:

  • Spicy Sausage Pasta/Caesar Salad/Garlic Green Beans/Garlic Bread
  • Sloppy Joes/Fries/Salad
  • Slow Cooker BBQ Chicken Breasts/Mashed Potatoes/Corn on the Cob
  • Roast Beef Sandwiches/Corn on the Cob/Chips
  • Pizzas (take and bake from Aldi – cheaper and better than frozen)
  • Eating Out
  • Leftovers  Blog Sig

  1. Oh, man! That totally stinks when the A/C goes out!!! So glad yours was fixed fairly quickly! It’s pretty hard to exist without the A/C, especially when there’s humidity. I can’t sleep well if it’s off.

    As for being thankful…..I’m thankful my mom is doing better. She slipped in the bathtub over the weekend and wasn’t feeling the best. Definitely going to have to get some of those sticky textured things to put on the tub bottom!

  2. Those waffles look delicious and I always love bacon for breakfast! Glad you got your AC situation fixed quickly. I bet your cats were hot on Friday. Our AC went out when we were living in Mississippi and we came home from vacation to find the house was so steamy. My poor cats were so mad and I might have cried over the situation. Thankfully it was fixed fairly quickly, but I’m hoping to never have to go through that again 🙂

    1. The cats were traumatized by the loud noise of the power company’s trucks – they are always aware if there’s someone new outside the house, and that stressed them out more than the heat I think! I’m glad I’m not the only one who cries when the AC goes out! 🙂

  4. Our air conditioner wasn’t working when we returned from our honeymoon and it took nearly a week, and quite a bit of money to get it fixed so I am really glad yours was simple. It is just too hot for that!
