Let’s Get Healthy {Menu Monday}

Happy New Year! I know a lot of people are working hard to get back to healthy eating after the holidays, and I’m certainly in that category. Although I haven’t talked about it on the blog, I’ve been steadily working on healthy eating and weight loss since September. I’ll talk more about that on Wednesday when I share my 2017 goals, but for now I’ll just share with you what we’re eating this week.

I received my first ever meal delivery service on Friday! My friend offered me a free trial from Blue Apron, so I thought, “why not?” It arrived on Friday and it was really fun to unpack all the fresh ingredients! Paul is such a picky eater that it was impossible to think they’d send us three full meals that he would enjoy. I’m taking ingredients from the three meals to make two suppers and I think that will work well. Once we’ve eaten those meals I’ll share our experience on my YouTube channel.

On The Menu 

Breakfast: 

  • Granola with Yogurt and Fruit
  • Cereal
  • Avocado on Toast
  • Instant Oatmeal

Lunch:

  • Deli Meat Sandwiches
  • Soup

Supper:

  • Blue Apron Meal: Steak/Roasted Potatoes/Kale (Green Beans for Paul)
  • Blue Apron Meal: Grilled Chicken/Linguine with Fresh Ricotta Sauce/Peas
  • Salads with Grilled Chicken x2
  • Taco Salad
  • Chicken Sausage
  • Date Night: Chick Fil A

  1. I’ve also been trying to eat healthier, so welcome to the club. 🙂 Can’t wait to hear how your Blue Apron trial goes. It’s an interesting experience for sure! There are still plenty of cookies, candies and a tasty Swiss Colony box from my aunt and uncle that we’re still eating our way through. Going to have to add extra exercise to my 2017 resolutions, as well! 😉

  4. Can’t wait to find out how the Blue Apron meals turn out. I’ve been wanting to try one of those services for a while. This week we’re having Shepherd’s Pie, Cashew Chicken, Chili, and Spiralized Zucchini and marinara sauce with salad.
