What We’re Eating {January 2017}

Last year I did a series where I shared new recipes that we tried and loved each month. I’m continuing that series this year with a few additions! Each month I’ll share the new recipes we enjoyed as well as anything else I’ve enjoyed as part of my new healthy eating lifestyle. Those might not be recipes – they might be things like quick snacks you can eat on the go!

Here’s what we loved in January!

New Recipe #1: Baked Potato Soup

Any recipe my Mom posts on her blog is going to be a good one. I knew I had to try this soup recipe as soon as she posted it! This is the easiest potato soup I’ve ever made, and I love that it eliminates the need to boil the potatoes. The consistency of this soup reminds me of the recipe that Texas Roadhouse uses. It’s creamy and SO satisfying! I baked my potatoes in the oven, but you could cut the prep time waaay down by using the microwave.

New Recipe #2: Crustless Spinach Quiche

I love making quiche when I’m serving breakfast for company, because you don’t have to worry about overcooking the eggs while you keep them warm. This quiche is very simple and can be modified for whatever you have on hand. The recipe calls for several cheeses – I just used mozzarella, feta and a shredded Italian blend. I halved the recipe and baked it in a larger dish, so it came out a lot flatter than yours probably will. This is also good reheated the next day!

Here are the other things I’ve enjoyed:

  • “Grilled” chicken salads – Chicken tenders marinated in light balsamic dressing and cooked in a skillet for about 5 minutes on each side, served on crunchy lettuce with lots of veggies!
  • Reduced sugar instant oatmeal with blueberries – it keeps me full all morning and satisfies my cravings for a sweet breakfast like waffles!

  1. What is the dish on the top right bottom square? I see peas, lettuce, tomatoes, and ?stripes of salad dressing?? I do see the posts for the baked potato soup, the quiche, the blueberry oatmeal…

      1. Jenny – that’s my “grilled” chicken salad, listed underneath “here are other things I enjoyed.” I don’t follow a recipe when I cook chicken for salads, I just use whatever I have on hand. 🙂

  2. I have never marinated chicken in balsamic dressing, but I’m intrigued. Each time you post that colorful grilled chicken salad my mouth waters. Can’t wait to try that. Thanks for the idea!

  3. That quiche sounds so good and healthy!! I love quiche and so I’ve got to give this one a try. I’m thinking it would be perfect to make and enjoy for breakfast or lunch over several days. We also love oatmeal for breakfast. Sometimes I’ll stir in a spoonful of peanut butter. It makes the oatmeal have the best consistency and helps keep us full until lunch.
