What We’re Eating {February 2017}

Snacks are a very big part of my new healthy eating lifestyle! I have found that if I have plenty of good options, I’m not tempted to indulge in sweets. Except for mint chocolate chip cookies. But we’ll get there in a minute. 🙂 Today I’m joining two of my blogging besties to share our favorite recipes from the month! Here we go!

New Recipe #1: Honey Yogurt Fruit Salad Dressing

I served this for my book club and it was a huge hit! This dressing is a perfect way to elevate fruit salad and make it taste more like a treat. I served it over fresh strawberries, clementines and blueberries. The fancy glassware made it taste even more decadent!

New Recipe #2: No Bake Granola Bars (recipe is in the description box)

These kinds of recipes are typically huge fails for me – but this was a major WIN! I love having granola bars for snacks, but I was getting a little tired of the overly sugary texture in the store-bought version. I followed Jen’s instructions exactly and didn’t have any issues with the bars crumbling or sticking to the pan. I stored them in ziploc bags, and they held up without crumbling for a week. These are delicious!

New Recipe #3: Mint Chocolate Delights

This picture does NOT do these cookies justice! Y’all, these are amazing cookies. Paul loves mint chocolate chip cookies and declared these the best ones he’s ever eaten! He typically prefers anything that comes out of a box or a bag, so I was thrilled that something I made from scratch took the top prize! I found that the cookies turned out best when chilled before baking. I made the dough and immediately baked one dozen (the ones you see pictured) and then froze the remaining dough in 1 inch balls. When I wanted a few cookies, I pulled them out of the freezer and let them sit in the fridge for a few hours before baking. The cookies turned out fudgy and completely irresistible. That’s why I only made a few at a time. Ahem.

  1. Yum! I’m a mint chocolate lover, too, so those cookies are going on my list! Fruit is a wonderful dessert, and I’m really excited for spring/summer because there’s much more variety!

    Sadly, I haven’t used many recipes lately. My sister’s had some health issues and was even in the hospital for a few days. It’s been crazy-busy around here! I’m looking forward to more opportunities to cook/bake and catch up on your blog and videos! 🙂

      1. Thank you SO much for the prayers! It’s not been an easy ordeal, and she’ll be going in for surgery, again, on April 21st. There’s a 70% chance of success, so we remain hopeful! 🙂

  2. Yum!! I’ve always wanted to make my own granola bars, but have never done it. Yours look delicious!! I also love your idea of a fruit salad dressing. Perfect for spring & summer treats 🙂 Thanks for sharing. I can’t wait to give them a try 🙂

  3. I’d like to say I’d choose the fruit salad or the granola bars, but I’m pretty sure it’d be these cookies! I love freezing dough and only making a few at a time…actually, if I’m being honest, I love making the entire recipe and eating them all, but you know…

  4. We love the granola bar recipe, they’ve been a staple for us for sometime now. They are so easy and tasty. Instead of the 2/3 c brown sugar, I use the 1/3c brown sugar and 1/3c peanut butter. The other recipes look good too. 😊
