It’s college sports season which means I’m seeing a little less of my husband. I’m not a March Madness widow, but his schedule as a college referee keeps him away from home during meal time at least once a week. Most of the time we eat the same thing, just at different times in the evening. Occasionally there are nights when Paul doesn’t need supper, or when he requests something I would rather not eat (meatballs, hot dogs, fish sticks, chicken nuggets and the like). On those nights I take the opportunity to fix something that appeals more to my preferences.
Lately I’ve been all about the burrito bowls. I love that I can have all the ingredients on hand and that they stay fresh in the fridge for several days – meaning less prep time for me! I don’t mind spending lots of time on a meal for Paul, but I’d rather not labor over a meal for just me.
It’s so simple it’s really not even a recipe! I get all the ingredients ready and then pile them in a bowl.
Brown Rice Burrito Bowl
- Brown Rice (my favorite is the Birds Eye rice that steams in the bag – it’s more tender than some of the other brown rice I’ve tried)
- Black Beans
- Salsa
- Canned Corn
- Lime Juice
- Chopped Fresh Tomatoes
- Chunks of Avocado
I usually mix the rice, beans and corn together and heat them for a minute in the microwave, then top that mixture with the cold ingredients. Here are a few other combos I’ve enjoyed:
Taco Version
- Turkey Taco Meat
- Black Beans
- Lots of Romaine Lettuce
- Taco Blend Cheese
- Salsa
- Chopped Fresh Tomatoes
- Avocado
Chicken Version
- Shredded Chicken
- Black Beans
- Canned Corn
- Chopped Fresh Tomatoes
- Lots of Romaine Lettuce
- Salsa & Ranch Dressing (Mixed)
The possibilities are endless! I know there are lots of other wives who eat supper alone, due to their husband’s work schedule (or maybe you really are a March Madness Widow!). 🙂 Since I know I’m not the only one, I hope this recipe gives you something to look forward to while you’re eating by yourself!
I’ve been craving Mexican food lately, so this needs to go on my list! Birds Eye rice is new to me, but I like the idea of tender rice. With warmer weather on the horizon (it’s a freezing – to me – 46 degrees here today), this sounds like a wonderful dish when you don’t want to heat up the house.

We had this last night and loved it! I did meatless, but could definitely see adding chicken or beef as well. I used quinoa instead of rice, and it was yummy.

I love these and take them with me to work. I’ve started adding cubes of roasted sweet potato because I just don’t love them on their own, so it’s a sneaky way to get all the nutrients and fiber in. Yum!

Yummy!! These sound so good and I love that you can switch things up so much. Add meat or don’t add meat and you’ve still got a great meal option. I’ll have to add these to our menu soon. I also think they’d be great for kids and adults since we can include only our favorite ingredients in them. Smart idea!!
