What We’re Eating {August 2017}

Pizza. It doesn’t matter who you are, if you’re breathing, chances are you like pizza. Right? This month instead of pulling a DiGiornio or Red Baron version out of the freezer and having a pre-made pizza 18-22 minutes later, I tried my hand at a few DIY pizzas! Here are two delicious pizzas that I made this month!

1// Blue Cheese and Spinach Chicken Pizza (original recipe here)

This isn’t a traditional pizza at all, but it was SO GOOD! I linked the original recipe above, but here are a few changes I made:

  • I used a whole-wheat tortilla instead of pizza dough (which I’m sure would have been amazing as well). I sprayed both sides of the tortilla with non-stick spray and sprinkled it ever-so-lightly with garlic salt.
  • I baked it on a cookie sheet under the broiler for just a few minutes, watching it carefully.
  • I used blue cheese instead of goat cheese, and melted the cheese with a splash of milk in the skillet. I don’t like goat cheese as well as blue cheese, and blue is what I had on hand!

2// Tomato and Mushroom Thin Crust Pizza

This is definitely a traditional style pizza. Paul’s part of the pizza that’s not pictured had pepperoni and mushrooms. Here’s how I make it:

  1. Toss tomatoes in olive oil and salt, roast them under the broiler until they burst
  2. Saute’ mushrooms in olive oil, salt and garlic powder (or add fresh garlic)
  3. Unroll pizza dough (my absolute favorite is Wewalka brand) and lightly sprinkle the underside of the crust with garlic salt
  4. Spread a thick spaghetti sauce on the dough – I use anything that has “hearty” or “rustic” in the name
  5. Layer pepperoni, veggies and then shredded cheese
  6. Top with basil, oregano or Italian seasoning (it all tastes the same to me!)
  7. Bake according to dough package directions

  1. I love pizza but don’t make it myself very often. Yours look amazing! I’d have to choose blue over goat cheese, too. Haha! So interesting to use a tortilla instead of a crust! Does it slice well? I’m wondering if that would be kinder to my stomach, as heavy doughs/breads tend to give me issues. (I have to limit how much I eat, and how often.) My favorite pizza is pepperoni, but the most recent one I made with tomatoes, basil and fresh mozzarella was AMAZING. I love that pizza is so versatile! 🙂

  2. I take wheat pita, place slices of freshould veggies ( spinach, tomato, orange pepper, mushrooms, a small amount of red onion. Top with dried basil and Italian cheese. Bake until cheese is melted. This is my go to when pizza is on the menu at my house.

  3. Yum!! We love BBQ chicken pizza, but I rarely branch out from our usual pepperoni and sausage. You’ve got me thinking about different combos I could try at home. Love that option to use a tortilla instead of a thick crust. Have you ever tried the 2 pack pizza crusts at Aldi? I’m always tempted.

  4. This is my favorite at home pizza. I’m a big fan of Trader Joe’s or Publix pizza dough. Of course, I have to adjust to add meat but it’s a great girl night pizza. 🙂 I also use flatbreads and do pizzas for lunch sometimes. So yummy!

    1. Thank you for that recipe! That’s the kind of pizza I usually order at restaurants, so I’ll definitely try that. I’ve used the Publix pizza dough and enjoyed it…but I don’t shop at Trader Joe’s. It’s not worth going onto Woodruff Road! LOL.
