It’s A Busy Week {Menu Monday}

Happy Monday! I hope you all had a great weekend, and if you’re one of my friends who got snow in the last couple days…I hope you’re staying warm! It’s been a crazy spring so far, hasn’t it?

Before I jump into this week’s menu, I have to share a great podcast I heard last week from Focus on the Family. It challenges our assumption that in marriage, our greatest need is to be loved by reminding us that God has already met our greatest need! Since our greatest need has been satisfied through the gospel, we now need to learn how to love others (particularly our spouse) the way God loves us. But now, on to the menu! I have a busy week ahead so I went with classic favorites for our supper meals. Tonight’s enchiladas are ready to go in the oven and the meat has been browned for taco salads and the stuffed peppers. We’re starting with comfort food and ending with salads since the daily highs are going from the 50’s to the 80’s this week. No complaints here! 🙂

  1. Yum! I’ve not had enchiladas in forever!! Our week’s started out cold and is also ending warm. Today we reached 70! Woo-hoo! Friday might bring thunderstorms, so that’s exciting! But then there’s snow back in the forecast for the weekend. Such a mixed bag of weather. Looking forward to those summer meals here, too! 🙂

  2. Sounds like a delicious week! I have a confession… I’ve never listened to a podcast. I know people love them, but I just can’t figure out when I’d add it into my days. When do you listen to them?

    1. I just started listening to the Focus on the Family one – I listen to it when I’m getting ready on the weekends, when I’m cleaning the bathrooms or when I’m driving to work. I try to substitute a podcast every once and a while during the time I’d normally have TV on in the background.
