My favorite salads always involve fruit – I love the flavors and the textures you get when you add fruit to a salad! Last month my Mom served a delicious salad that used a honey goat cheese she found at Aldi. It was such a nice change from the usual feta or blue cheese I typically use.
When I saw my Aldi had some in stock, I grabbed it up and couldn’t wait to use it! I made this strawberry salad using things I had on hand (also all purchased at Aldi) and it was so good that I have to share it with you!
Summer Strawberry Salad
- Spring Mix
- Sliced Fresh Strawberries
- Chopped Pecans
- Goat Cheese with Honey (here’s what the Aldi version looks like)
- Balsamic Vinaigrette – I love the Light and Fit version from Aldi and it’s less than $2!
The amount of each ingredient that you use isn’t super important. Just put as much or as little as you like! I used about a tablespoon of the goat cheese on my large salad.
Here’s the key to making this salad – prepare it at least 5 minutes before you want to eat it. Add all the ingredients, including the dressing, and mix it well. Once the vinaigrette has a few minutes to break down the berries and the cheese, mix it again.
This makes the goat cheese really creamy and evenly distributes those strong flavors into every bite. I took these pictures before I mixed the salad – it’s prettier this way, but so yummy when it’s all blended!
Doesn’t that look delicious?
this post wasn’t sponsored by Aldi – it’s just a good place to buy salad ingredients 🙂
This looks yummy, but I would have to leave the goat cheese off of mine. 😉 Speaking of Aldi….guess what???!!! We’re getting an Aldi here in Fremont! It’s set to open later this year. I can’t wait to shop there and find some of the great bargains you’ve mentioned. 🙂 So exciting!

Your salad looks amazing! We love a balsamic dressing. I get cheap balsamic and reduce it down at home and use with a drizzle of olive oil. Love Aldi olive oil! Haven’t tried the Light and Fit dressing. Yummy!

I love berry salads!! They are just so delicious this time of year. I also love almost every cheese, but can’t get on board with tangy goat cheese. I keep trying it thinking I’ll like it with the same results haha. I’ll look for that balsamic at Aldi – haven’t tried their version yet.

Honestly, I wasn’t a goat cheese fan until I tried this one with the honey. I’m not saying it will make you a convert – but it’s not as tangy as plain goat cheese. 🙂
