3 Delicious Recipes For Busy Days

This is such a busy time of the year, isn’t it? It seems like everyone I know is really busy right now, no matter what stage of life they are in! Here are three recipes I’ve made recently that are delicious and fast. The first two are great for getting supper ready in less than 30 minutes, and the third is a great lunch option for home or on the go.


#1 Taco Casserole

My mom used to make this when I was growing up, and I love it as much now as I did then! It is such an easy recipe that delivers great flavor & delicious comfort all in one bite!

You could use Rotel tomatoes instead of regular diced tomatoes and add a can of creamed corn to make it a tamale pie, but honestly I just love the original version SO much. I eat mine topped with a large spoon of sour cream!

#2 BBQ Turkey Cups: Another recipe I’ve been eating for probably 25 years or more! This one is also really simple but so delicious!

#3 Greek Chickpea Salad – This recipe is really filling and has great flavor! Most days I don’t feel like eating meat at lunch and this totally hits the spot.

Also I’m still packing cold lunches for work because of the snake situation. Remember that story?

So yummy – I’ll have to try each of these recipes! 🙂 I have always struggled more with lunch, so this summer I decided to keep two main items on hand in the feeezer to make it easier on me – cooked, shredded chicken (made in the crockpot) and a homemade quinoa/rice combo. I can defrost these two things and add a few fresh ingredients to make quick lunches (like Mexican bowls, salads, etc.).
