Last week we spent 6 glorious days at the Happiest Place on Earth – Walt Disney World! It is hands down our favorite place to vacation. Magic Kingdom is my favorite park, and while we are there we love to eat at Be Our Guest Restaurant. It looks just like Beast’s castle from Beauty and the Beast, one of our favorite Disney movies!
We had lunch at Be Our Guest this time around, and I enjoyed my meal so much that I came home and immediately tried to recreate it! It was a simple carved turkey sandwich, but it was delicious. I struggle to find simple, yet delicious things for lunch on the days we eat at home and this is perfect for those days.
My take on this sandwich combines the things I liked about the one I ate at Disney: soft bread, creamy spread, melted cheese and flavorful turkey. I used the items I had on hand and came up with a delicious sandwich that Paul and I both enjoyed! Now if I could just recreate the view…
Open Faced Turkey Cheddar Sandwiches
- Italian or French Bread
- Sliced Turkey (this would be amazing with leftover Thanksgiving Turkey!)
- Dijon Mustard
- Mayonnaise
- Cheddar Cheese
Preheat the broiler and set out a cookie sheet. Slice the bread into 6 inch pieces and then in half down the middle, giving you open face sandwich bases. Take a large spoon and carefully scoop out some of the bread so that you have a more hollow sandwich base for layering your ingredients.
Spread Dijon Mustard and Mayo on each half, making sure the two mix as you’re spreading it (so it’s more like a sauce than just mustard and mayo). Layer slices of Cheddar Cheese on the bread next, followed by lots of turkey.
Place the sandwiches on a cookie sheet and slide them under the broiler for 2 minutes, just until the sandwiches are warm and the cheese begins to melt. Watch them so the bread doesn’t burn. Serve immediately.
