Rejoice! Fall weather is here! I was so excited to make my menu plan this week, looking at the forecast to see every single day with highs below 80. 🙂
This is the second week of a two-week grocery haul so I had to choose recipes that worked with what I had on hand. Next week I’ll be stocking up on everything I need to make chili – I can’t wait to make my first batch of the season!
On The Menu
Breakfast:
- Green Smoothies
- Oatmeal
Lunch:
- Hearty Southwest Black Bean Soup
- Leftovers
Supper:
- Roasted Potato and Bacon Soup
- Taco Casserole over Corn Muffins/Fruit
- Chicken Alfredo Pasta/Caesar Salad
- Tuscan Sausage and Bean Soup/Garlic Toast
- Cheesy Green Chile Chicken Enchiladas/Tossed Salad
- BBQ Chicken/Mac & Cheese
- Leftovers
I also made a batch of those super easy Pumpkin Chocolate Chip muffins on Saturday (Devils Food cake mix, a can of pumpkin, 1/2 cup of water and a handful of chocolate chips). It was cool and rainy and I had to bake! 🙂

Yum! Last week were were trying to eat up all the things we already had and this week I planned lasagna, paninis and all the yummy dinners. I’m ready for comfort food inspired Fall meals.
