Two Week Meal Plan {Menu Monday 3.23.20}

“Well that escalated quickly.” That phrase applies to SO many things right now, am I right? Normally in March Paul is on the road with sports most evenings, so I plan about two “big” meals each week and then fend for myself the rest of the week. When it’s just me, I have a lot of meatless meals or a main dish that I eat for several nights.

Enter the Coronavirus and the cancellation of every. single. sport. Suddenly Paul is home for supper every night – which isn’t a bad thing – but it means I have to step up my meal plans! 🙂 I know everyone is making meals at home, perhaps more than usual, so hopefully this two-week meal plan will be helpful for you too!

  • Leftovers
  • Hot Dogs (Because Paul)
  • Avocado on Toast
  • Deli Turkey Sandwiches
Blackened Chicken Tacos

  1. Hooray for meal plans. It has been quite some time since I made these (which I did always when I was raising a family) but thought I should plan ahead a bit. Tired to meal plan this weekend and, apparently, I have lost the art!!? Thanks for the help….getting the rusty wheels turning again!!

  2. Yum!! Ground meat seems to be in short supply at the stores around me so we are changing up our meat options regularly. I stocked up, but am also trying to try out new meat options. My kids are loving bacon, kielbasa sausage and we’re adding more peanut butter into breakfast and lunch options.

    1. Meat is in short supply here, too. I went to my local grocery store right when they opened earlier this week and was happy to find the meat section completely stocked – other shelves, not so much – but I got plenty of meat for the next few weeks. Hope you can find what you need, too!
