One of the best things that came out of the COVID-19/Coronavirus months had to be Paula Deen’s Quarantine Cooking series on YouTube! It is almost like you’re pulling a chair up to her kitchen counter and sipping sweet tea while she cooks in front of you. I’ve spent a lot of time doing that in my Mom’s kitchen and in my Nana’s kitchen, which might be why it’s so comforting to me.
However, that means I’ve been inspired by so many of her delicious dishes and have made quite a few of them! Because of her, I’ve made Chocolate Peanut Butter Pie, Macaroni and Cheese, Chicken Salad, Pimento Cheese and Tomato, Cucumber and Onion Salad. At least one of those was a vegetable dish! 🙂
The most recent one I tried was Savannah Red Rice. I love having turkey or chicken sausage in my fridge because it keeps for a long time, doesn’t have to be defrosted or cooked through and is a great go-to meat. Paula’s Red Rice is perfect with Turkey Sausage! We loved this recipe. I used cooked minute rice, so I only used half the amount of water that the recipe calls for. That way I knew the rice wouldn’t be crunchy and my meal was ready in just over 30 minutes!
For last week’s menu that you see below, I can’t actually remember what sides I served with each meal. I write the main dishes in my menu plan and decide on my sides each day, based on what I have. Just know it was something fresh and delicious! 🙂
