Menu Monday + Different Things {4.4.22}

This menu is a little different from the usual, for a couple reasons. Right now Paul is in a busy season of officiating college lacrosse, so we don’t eat supper together every night. Because of that, I usually just make salads to go with the main dish and plan for a couple nights of leftovers or “you’re on your own” type meals.

It’s also different because it’s been quite a while since I bought chicken, even if you count the last time I picked up a rotisserie chicken. Either my stores have been out of stock or the price is much more than I’m willing to pay.

However, I’ve been able to find great deals on pork chops, ground beef and ground turkey so I’m working with those proteins in this menu. The oven fried pork chops listed below are delicious – just go easy on the coating. A little goes a long way, trust me.

For my lunches I really enjoyed coming up with a way to use imitation crab meat. I buy mine at Aldi or when it’s BOGO at the regular grocery store. It’s nice to have on hand because it can stay in the fridge (before you open it) for several weeks. I usually have the crab salad with crackers, cheese slices, veggies and hummus.

When I bring home my groceries each week, I have a choice. I can either complain and fret over the rising price of food, or I can praise God for his faithfulness and be grateful for the groceries that will be more than sufficient for our needs.

As the hymn says, “All I have needed, thy hand hath provided. Great is thy faithfulness, Lord, unto me!”

  1. Chicken has been really hard to come by! Wonder why?? Thank you for reminding us to choose to be thankful for what God has provided. It’s easy to go straight to complaining . . . .
