January's New Recipes

I love finding new recipes to add to my weekly menu rotation. During the month of January I put several new recipes on the menu, and they all turned out to be keepers! There’s something about a new year that makes us want to freshen things up, isn’t there? Today I’m joining with Katie from Cup of Tea Blog and Whitney from Polka-Dotty Place to share the new recipes we’ve tried and loved during January!

Beef EmpanadasThe recipe I followed called for pie crust, but I used puff pastry instead. This was my first try with puff pastry, and I found it really easy to work with. I followed the instructions on the package and adjusted the oven temperature accordingly. These would be great to have on hand in the freezer for quick lunches!

Texas Toast Pizzas

These were a HUGE hit with my husband! He loves pizza and anything on French bread, so I figured it would be a winner. The recipe calls for Texas Toast garlic bread (which I’m sure would be amazing), but I made these on bakery French bread with Bertolli garlic & olive oil pasta sauce. All of the ingredients I used are things that I get on sale for less than $1 – so this is a delicious AND frugal meal! I served it with a tossed salad and called it a night!


 

Tender Roast in the Slow Cooker

Cooking a roast in the slow cooker seems to always be a gamble for me – sometimes they come out juicy, sometimes they come out tough and dry. I’m so happy to have found this recipe! It made a really tender and juicy roast with lots of delicious gravy.

After the roast was cooked, I removed the gravy from the slow cooker and thickened it on the stove. Even though I used canned gravy, I found it needed to be thickened after cooking all afternoon. The drippings from the roast made that gravy so delicious!

  1. These all sound delicious, especially the Texas toast pizza. I’m a sucker for anything with Texas Toast and pepperoni. đŸ™‚ Glad you found a good roast recipe. They are always a gamble when I make them too. I’ll be checking out Whitney and Katie’s posts too! The recipes that Whitney often shares always look good!

  3. It all looks good, but especially the roast! We haven’t bought red meat in ages, but that slow cooker roast is very tempting …. I love my slow cooker.
