#1   It’s been a gorgeous spring week in South Carolina! I’m trying my best to enjoy it as long as it lasts! 

#2 I made crab cakes for supper one night this week. They were the best I’ve ever made, and I know it’s because I used my new(ish) cast iron skillet! My mom always says that the right kitchen tools make all the difference and I definitely believe her. They got all golden and crispy on the outside and were perfectly cooked on the inside. The only problem was that I didn’t make enough! 

#3 There’s a new video on my YouTube channel – it’s all about the things I usually have in my car. Watch it and let me know if you have any in common with me!

#4 Paul and I got a rare Friday night date night last weekend! I was in the mood for a burger and fries so we headed to Fuddruckers. I always order the kids burger and end up so full! It’s not because I have a tiny appetite – it’s just a lot of food! Do you order off the kids menu anywhere?

#5 Tomorrow morning I’m headed to catch the bulk of Saturday’s Becoming Conference sessions. It’s been four years since I attended and I’m so excited about this year’s speakers! Let me know if you’re coming (there are still tickets available if you want to be spontaneous!)!

  1. I ordered from the kid’s menu regularly! It’s usually plenty of food. Your weather sounds wonderful and those crab cakes look amazing. I don’t own a cast iron skillet. Maybe I’ll add it to my birthday wish list this year 🙂

  2. It’s been a pretty good week here. We had a little snow, but it’s all melted and there’s 60s in the forecast. The buds are also on the trees, soon to open. Your crab cakes and burger look mighty tasty! I enjoy getting the kids’ burger meals at Runza, which also come with an ice cream cone. 🙂

    Enjoy your conference! I just started a new job this week (office assistant at the high school) and am looking forward to a low-key weekend. Adjusting to the early hours (I start at 7 a.m.) is a bit of a challenge.

  3. I like to order a kids meal at Panda Express. I love their food, but ordering a regular sized plate means I either have to be able to refrigerate leftovers, or I eat the whole thing and that’s too much. When I’m in a hurry, the kids meal is the perfect size.
