Happy Monday! I hope you had a great weekend and that the outcome of the football games leaned in your favor. From the looks of my Facebook news feed, I have a feeling that’s not the case for a lot of you. We had a short but good weekend – one filled with work and a little bit of fun. If you missed yesterday’s vlog, here’s a little peek into our Sunday!
This week’s menu is a little pasta-heavy, but I don’t think either of us will complain. I promise to make up for it with lots of veggies on the side.
On The Menu

Supper:
- Baked Brown Sugar Chicken Legs/Green Beans
- Mexican Mac & Cheese/Tossed Salad
- Mini Meatloaves/Green Beans
- Chicken Alfredo with Gnocchi/Peas
- Slow Cooker Creamy Ranch Chicken/Peas/Scalloped Potatoes
- Spaghetti/Sauteed Corn/Parmesan Knots
- Leftovers

I always enjoy eating gnocchi at restaurants, but have never tried to make it at home. I’ll have to remedy that this Fall. The girls at my house love pasta so we often have pasta dishes for lunch. I’m curious how you enjoy eating your grits? I have tried them several times and don’t love them so I’m always curious to see how people who love them top their grits.

Gnocchi is SO easy to make and only takes 3-4 minutes to boil. I ended up just serving the gnocchi with alfredo sauce and a side salad, no meat, and supper was SO quick to get on the table! I prefer cheese grits instead of with gravy or butter & salt. It’s definitely an acquired taste! 🙂
