What We’re Eating {November 2017}

Hi friends! I hope you had a great week celebrating Thanksgiving with those you hold dear! On Friday I’m planning to share pictures from my family’s Thanksgiving celebration, but today I’m continuing last week’s theme of Thanksgiving FOOD. 🙂 Here are the recipes I loved from November!

#1 Southern Broccoli Casserole: My sister hosted Thanksgiving and served some incredibly delicious food! My favorite side dish (second only to mashed potatoes) was the broccoli cheese casserole she made. It’s not healthy…I’m not sure it’s even still a vegetable under all that cheese, mayo and bread crumbs…but it’s delicious! Make it for your next indulgent meal and you will be sure to agree!

#2 Chocolate Chip Pumpkin Roll: Another winning recipe from my sister’s Thanksgiving table! This dessert was amazing!

#3 Mexican Casserole: After all the rich holiday food, I’m usually hungry for Mexican. I used to make this casserole all the time but hadn’t made it in a couple years. It’s back and it’s here to stay! With layers of beans, cheese, meat and tortilla chips, it’s a nice variation on taco night that’s both filling and frugal.

#4 Pumpkin Turnovers: When my friend Beth shared this recipe last month, I knew I had to try it! These turnovers were so simple to make and would be delicious for brunch or dessert!

  1. Can I go to your sister’s next year?! LOL That pumpkin roll looks decadent! So do you have a really good mashed potato recipe or do you just love mashed potatoes? That is always the side I take to family gatherings and I haven’t found an outstanding recipe yet.

You are more than welcome! 🙂 The answer to your question about mashed potatoes is both – yes I just love them and yes I have a good recipe. 🙂 When I’m making potatoes to take to a gathering or to prepare ahead of time for company, I make “Pioneer Woman’s Creamy Mashed Potatoes.” They are NOT healthy but oh so delish!

  2. I’d like one of everything!! Such a yummy assortment. I also love cheesy broccoli casserole. I never make it because my hubby doesn’t care for it, but I always get seconds when someone else serves it. Love that pumpkin roll. What a pretty dessert. I feel a little intimidated to pull off a dessert like that. Thanks for sharing. Now I’m in the mood for mexican for dinner 🙂
