My husband jokes that any time he’s not home for a meal, my main course by default is “avocado and tomatoes.” He’s not far off because those are two of my favorite foods that I try to always have on hand.
Without a doubt, my favorite way to eat “avocado and tomatoes” is (for breakfast or lunch) on toast! In case you’ve never made this deliciously easy recipe, here’s how to do it!
My Favorite Avocado Toast
- Ripe Avocados
- Cherry Tomatoes
- Arnold Multi-Grain Bread (or any sturdy, whole wheat bread)
- Crumbled Feta Cheese
Toast the bread in the toaster until it’s nice and golden. Slice an avocado in half and scoop enough to generously cover a slice of toast. Spread it on the bread, smashing it down with a fork. Add salt and pepper to taste. Top with sliced cherry tomatoes and crumbled feta cheese. Enjoy!

I love avocado & eggs – egg salad or fried eggs on toast, but still haven’t tried your favorite combo. I have tomatoes so I just need to pick up some feta. I love all those ingredients just haven’t ever put them together. When my husband won’t be home for dinner we have pasta. It’s not his favorite. And if I’m not home for dinner he plans seafood or picks up sushi because those aren’t my favorite. π
