What We’re Eating Wednesday {9.27.23}

Until I put this post together, I didn’t realize how much chicken we ate in September! I shopped at Aldi for most of the month, but I did get a great deal on boneless chicken breasts at our local grocery store and used those up before purchasing more meat.

I also tried to keep my grocery costs down by making similar meals that allowed me to use up ingredients in my fridge and pantry. For example – yellow rice and fresh pico work well with both Spanish Style Pork Bowls and Fiesta Lime Chicken.

Breakfast casserole and pumpkin bread are perfect to make ahead and enjoy during the week. I even enjoy this casserole for lunch.

  • Deli Turkey Sandwiches with Swiss Cheese and Spicy Brown Mustard
  • Pork Carnitas Quesadillas (with leftovers from the Spanish Style Pork Bowls below)

Who’s ready for soup season? I’m so excited for the temperatures to drop so that we can have all the cozy meals that are perfect for fall.

  1. It looks like you had fun in the kitchen this month! Lots of yummy meals. It’s just barely starting to cool off in the Midwest so I made chili last weekend. I love soup season and have vegetable soup on the menu next.

  2. Your fall plates make a beautiful backdrop for your yummy food! I also love the picture of the pumpkin bread and the egg casserole! It all looks so good! I’m right there with being ready for all the soup recipes!
