What We’re Eating Wednesday {10.25.23}

This month I tried several new recipes. I haven’t branched out in a while, and it was fun to try some new meals. On my menu below I denoted them with an asterisk. The other meals listed are tried and true favorites of mine, making this a really solid lineup of recipes.

One thing I’ve had in constant rotation this month is my go-to fall salad: baby spinach, fuji apples, craisins, feta cheese, and a vinaigrette dressing. The light and fresh flavors go really well with heavier soups and comfort food entrees.

I have it on a paper plate because our dishwasher died this month. You don’t realize how many dishes two people can really use in a meal until you have to wash them by hand. 🙂 The new dishwasher should be installed soon and I am so grateful.

  • Breakfast Burritos: scrambled eggs, bacon, and cheese in a tortilla

  1. Is the picture in your post chicken pot pie served with mashed potatoes? I’ve never thought to do that, but it looks incredible!
