
This month I tried several new recipes. I haven’t branched out in a while, and it was fun to try some new meals. On my menu below I denoted them with an asterisk. The other meals listed are tried and true favorites of mine, making this a really solid lineup of recipes.
One thing I’ve had in constant rotation this month is my go-to fall salad: baby spinach, fuji apples, craisins, feta cheese, and a vinaigrette dressing. The light and fresh flavors go really well with heavier soups and comfort food entrees.
I have it on a paper plate because our dishwasher died this month. You don’t realize how many dishes two people can really use in a meal until you have to wash them by hand. 🙂 The new dishwasher should be installed soon and I am so grateful.

On The Menu
Breakfast:
- Breakfast Burritos: scrambled eggs, bacon, and cheese in a tortilla
- Yogurt with Fruit and Granola
Lunch:
- Tomato Soup and Grilled Cheese
- Chicken Salad Croissants
- Mediterranean Couscous Salad* (with leftover couscous from supper)

Supper:
- Bacon Chicken Club Pizza – these are great on the thin crust pizzas from Dollar Tree
- Baked Chicken Parmesan Meatballs/Penne Pasta and Jarred Pasta Sauce
- Picky Eater Approved Chicken Pot Pie/Southern Green Beans
- Cheese Ravioli with Meat Sauce
- Chicken and Dumplings using Cheddar Biscuit Mix*
- Juicy Baked Pork Chops*/Parmesan Couscous (the box mix from Aldi)
- BBQ Chicken Legs/Mac and Cheese
- Baked Tacos*
- Homemade Chicken Noodle Soup/Cheddar Biscuits (using the mix from Dollar Tree)
- Quick Beef Chili/Corn Muffins

Snacks and Dessert:
- 3 Ingredient Apple Dip – I like to use whipped cream cheese with this recipe, it makes it so much easier to blend the ingredients
- Pumpkin Bars

Is the picture in your post chicken pot pie served with mashed potatoes? I’ve never thought to do that, but it looks incredible!
Yes! My recipe ends up with a pretty think, ample gravy, so it’s perfect with mashed potatoes. Although…I could eat mashed potatoes with just about any meal. 🙂
