Happy Monday, everyone! I hope you had a great Easter weekend! On Saturday I had a chance to do some meal prep for the upcoming week. It’s so helpful to not only have a menu planned but also have some of the meal preparation done ahead of time! Here’s what I was able to accomplish (click here to see previous weekend prep work):
- Made a batch of Pumpkin Muffins (recipe linked below) – put half in the freezer
- Cooked 1 pound of ground turkey – half for lasagna, half for stroganoff
- Baked lasagna for Monday’s supper – lasagna’s always better reheated anyway!
On The Menu
Breakfast:
- Pumpkin Muffins (this recipe only takes TWO ingredients – I leave off the streusal topping)
- Cereal
- Peanut Butter Toast
Lunch:
- Leftovers
- Frozen Pizza
- Tuna Salad Sandwiches
Supper:
- Extra-Easy Lasagna/Sauteed Corn
- Crock Pot Chicken Thighs/Mashed Potatoes/Peas
- Turkey Stroganoff with Egg Noodles (I’m cooking this on the stovetop instead of the slow cooker)/Green Beans
- Baked Chicken Strips/Potato Salad from the deli/Peaches
- Slow Cooker Creamy Ranch Chicken/French Green Beans
- Leftovers
- Date Night



We are having a quiet menu week around here. Lots of leftovers from Easter to consume, and plenty of random frozen bits that need eaten 🙂 And I love lasagna, but hate the time it takes, so I’ll definitely be checking out and trying that lasagna recipe.

I love the idea of having your meat browned and ready to cook with ahead of time. I don’t care for this job, but have found that doing it in advance makes dinner go so much faster. I need to try to freeze and thaw more things. I don’t feel like I have much experience in this area so I often forget about the convenience of it.
I love having baggies of browned meat and roasted chicken in the freezer – it even makes for a quick and easy lunch. Tacos, chicken salads, etc. Especially if you don’t like browning meat, doing it all at once would be a little less painful than doing it three times. 🙂
Awesome menu! I’m taking a break this week from my menu planning since we’re out for Easter Break! If I didn’t spend some time in the kitchen on Sunday afternoons getting ready for the week, our entire week would be an epic fail when I got home in the evenings! Have a great week!
