Easy Baked Tortellini New Recipes For February

I tried two new recipes in February and they were both keepers! I saw a package of Sausage Tortellini in the freezer case at Aldi and knew it would be great for a weeknight meal. The recipe I found on Pinterest for Twenty Minute Easy Tortellini Bake was exactly what I wanted – quick and simple with only a few ingredients. I used Prego Italian Sausage & Garlic Meat Sauce and we loved the flavors combined with the sausage pasta. I served this dish with a side salad and my fancy garlic bread (hot dog buns, buttered and sprinkled with parmesan cheese, garlic salt and Italian seasoning; broiled for 3 minutes until the edges get toasty). Carbs and tomato sauce for the win!

The second recipe I tried and loved this month was Creamy Zuppa Toscana Soup. This is one of Paul’s favorite soups to order at Olive Garden, and when I saw the copycat recipe on Carolina Charm I knew I had to try it! Paul loved it – there were no leftovers! This soup is hearty and sure to please the meat and potatoes lover in your house.

  1. Yum! The girls at my house love tortellini so I’m going to have to remember that recipe for lunches one week. We’re having breakfast for supper this week, too. Friday is National Pancake Day so I figured it was a good idea. I think we’re going to do blueberry pancakes, bacon and eggs 🙂


    1. You could lighten it up for lunch with cheese tortellini and a marinara sauce – I think that would be so yummy! National Pancake Day is a great holiday, definitely needs to be celebrated. 🙂


  2. That sausage tortellini looks so good – I’ve been wanting to try something like that for a quick weeknight meal. I love meals completely from scratch, but sometimes you just need something a little quicker/eaiser. And hot dog buns (or hamburger buns!) make great Italian/garlic bread! ;)I have been looking around for a good soup recipe for when I have my in-laws over for dinner and I just might try the Olive Garden copycat one. 🙂
