I’ve made some really delicious new recipes lately and I have to share them with you!
#1 Cheeseburger Calzones: These were a big hit with my husband who loves calzones! The recipe uses a low-carb, grain free pizza crust, but I just used a refrigerated one with all the carbs and grain. This is not a healthy recipe, but it’s very filling. It would be perfect for entertaining. I sliced the leftovers into 1 inch thick pieces and it reheated beautifully in the oven.
#2 Fancy Cinnamon Toast with Berries and Goat Cheese: This recipe isn’t available online, but it’s another reason why you need the Love Welcome Serve (aff) cookbook! It’s full of beautiful, delicious recipes like this one!
#3 Fiesta Lime Chicken: This one is healthy, super easy and fresh – perfect for summer. The lime ranch sauce that you make for the chicken is also great in place of sour cream on tacos, nachos and enchiladas! I served it with Mexican rice as suggested.
#4 Skillet Shepherd’s Pie: Ok, so this is definitely more of a winter/comfort food recipe…but sometimes you just need a cozy meal in the middle of summer! I used ground turkey instead of ground beef and it was delicious.
I’ve also been eating a lot of avocado toast, salads with fruit & goat cheese, and some refreshing treats that I’ll share with you on Friday. What have you been cooking lately?
