
Here’s another big round up of meal ideas for you. In this post I have over 25 breakfast, lunch, and supper ideas to give your meal planning some inspiration.
Supper can be chaotic and stressful at times. Right now Paul is still in a busy sports officiating season, so I’m on solo parenting supper duty a couple times a week. I balance those crazy meals with a few “fancy” meals for myself during the school day.
It’s nice to enjoy a beautifully plated, quiet meal while the food is still hot. ๐ Sometimes I fix a fancy breakfast after I drop the kiddos off at school, and sometimes I do a fancy lunch.


Here’s a big list of the things that have been eaten and enjoyed by (almost) everyone in our family.
On The Menu
Breakfast:
- Cereal
- Waffles and Scrambled Eggs
- Easter Sunday Breakfast: Bunny Cinnamon Rolls, Scrambled Eggs, Sausage Links
- Pioneer Woman’s Tater Tot Breakfast Casserole – I used leftover Easter ham instead of sausage and it was delish!

Lunch:
- School Lunches: Pepperoni Rolls, PB&J, Mini Corn Dog Muffins
- My Lunch at Home: Salads with Blackened Chicken, Fancy Avocado Toast, Scrambled Eggs with Fruit and Toast, Leftovers
- Weekend Lunches at Home: Chicken Nuggets, Mac and Cheese, Homemade Pizza, Hot Dogs, Tacos

Supper:
- Creamy Ranch Chicken with Smashed Red Potatoes
- Italian Pot Roast with Parmesan Risotto
- BBQ Chicken Quesadillas
- Salads with Chicken
- BBQ Pork Roast with Crash Hot Potatoes
- Make Your Own Tacos: I set out taco meat and all the toppings with their choice of hard shell, tortilla, tostada, or tortilla chips
- Countryside Chicken Bake
- Chicken Bacon Ranch Sliders
- Taco Mac and Cheese
- Easy Oven Burgers
- Sheet Pan Chicken Fajitas
