New recipes for June via

This month I tried a couple recipes that have been on my Pinterest “recipes to try” board for a long time, and also a few things that I just recently pinned. Apparently I was really into tomatoes and bacon this month! Here are my new recipe successes from June – click the recipe title to view the recipes.

Creamy Bacon Tomato and Avocado Pasta SaladCreamy Bacon, Tomato and Avocado Pasta Salad

Let’s start with a recipe that has been on my Pinterest board for YEARS. I probably pinned this one four years ago, and I finally got around to making it! This was taken to a party at work and it was a huge hit. I used garden rotini pasta which gave the salad even more color and texture. The avocado pulls everything together with a delicious creaminess! I made the salad the night before and added the avocado just before serving.

I’ve eaten this dish at my mom’s house, but this was my first attempt at making my own. I used Frannie’s Lard Crust for the pie shell because it’s the only pie crust recipe I’ve ever used with success! 🙂 Paul doesn’t really like tomatoes, but he actually thought this tasted pretty good. When the tomatoes are covered in bacon, mayonnaise and cheddar cheese, what’s not to love? This makes a great summertime supper with a tossed salad and a glass of sweet tea!

I made two other new recipes this month that didn’t get photographed (#bloggerfail), but they are good enough that it warrants sharing them without pictures!

  • Chicken Parmesan Roll-ups: Another recipe that I pinned years ago! This one required a little more prep work than I usually attempt on a week night, but they were perfect for the weekend. I used marinara sauce instead of diced tomatoes, and my tomato-wary hubby loved this dish!
  • Bacon Cheeseburger Wraps: These were SO yummy and full of flavor! I also like them because you get the same taste as a bacon cheeseburger, but without using as much meat per person. Frugal and delicious, yes please!

  1. Wow, those recipes sound awesome! You had me at “avocado” and “pasta.” 🙂 Two favorites around here, and adding in bacon and tomato sounds delightful. Haven’t made anything too new lately, but I will be making a bacon cheddar potato salad for Independence Day that I’ve only made once before. It’s delicious!     1. Yes – it does take a little bit of assembly time, but it’s worth it! The part that takes me the longest is filleting my chicken – so if you buy chicken cutlets, that would make the process a lot faster.


  2. Yummy! Your tomato pie looks really pretty! I had never heard of that pie until I lived in the South. I’m not a huge cooked tomato fan, but I think I could get over it with the cheese and bacon combo added in. Those cheeseburger wraps sounds amazing! Pinned that recipe to try because we love eating burgers. I’m always looking for new avocado recipes so thanks for sharing a new one for me 🙂


    1. The tomato pie topping almost tastes like pimento cheese (another Southern delicacy) with the mixture of the mayo and cheddar cheese. So it’s basically as Southern a dish as you can make! 🙂

  4. Wow, Whitney! This is quite the bonanza of fantastic-looking recipes. I am pinning and saving all of them. That salad in particular looks as if it would be a winner at potlucks. I may take it to a 4th of July picnic we’ve been invited to. Thanks for sharing all of these.
