What We’re Eating {April 2017}

April is almost over, and I have to admit…it flew by! We were pretty busy this month and with Paul’s refereeing schedule we didn’t eat a lot of suppers together. As a result, I didn’t do as much cooking as I usually do. I missed it! So what did we eat?

#1 Salads with Chicken – this is my go-to meal when I’m eating alone. It’s quick, filling and super healthy. For this salad I used leftover baked chicken, hard boiled eggs, cherry tomatoes, peas, cucumbers and light Ranch dressing. Another version I enjoyed for lunch several days was made with spinach, shredded carrots, cucumber, tomatoes and a handful of roasted peanuts topped with light Honey Mustard dressing.

#2 BBQ Pork Nachos – This was a deliciously indulgent meal that I definitely enjoyed! Making nachos with whatever I have on hand is one of my favorite pastimes. 🙂

#3 Berry Breakfast Smoothies – I’m still on the hunt for the perfect smoothie recipe, but so far I’ve been enjoying the basic formula from The Domestic Geek’s smoothie recipes. Also I need to pick up some wider straws…

#4 Kraft Zesty Lime Vinaigrette Dressing: I felt like this deserved a mention in today’s post. I picked it up to use as a marinade for my Balsamic Grilled Chicken and then noticed that Whitney uses it in her Fresh Avocado Salsa recipe. Since I use most of those ingredients in my Brown Rice Burrito Bowls, I threw a little bit of the dressing on top of my bowl. Oh my goodness. It’s amazing! Side note: it’s also delicious as a marinade. Win!

  1. Yummy month! I’ve never added peanuts to my salad so I’ll have to give that a try. Those bbq nachos sound amazing since it combines two of my favorite foods. Glad you love the Zesty Lime dressing. Isn’t it so good!?!? I love using it as a marinade, dressing and in that salsa. I need to pick up another bottle of it the next time it’s on sale.
