I’m trying something a little different with menu planning! For the summer I decided to try the themed approach to meal planning instead of just picking 5 or 6 meals that sound good and that correspond to my pantry inventory. Here’s what I came up with:
- Monday: Italian
- Tuesday: Tacos (obviously!)
- Wednesday: Sandwiches – because Wednesdays are busy AND I like to have oven-free meals during the summer
- Thursday: Crock Pot Meal – another oven-free option for hot days!
- Friday: Leftovers or Entree Salads
- Saturday: New Recipe or Leftovers
- Sunday: Comfort Food
With that framework in mind, here’s what I planned for our meals this week!
On The Menu
Breakfast:
- Smoothies
- Whole Wheat English Muffins with Peanut Butter
- Chicken Sausage and Scrambled Eggs
Lunch:
- Tropical Green Smoothies: banana + handful of spinach + frozen pineapple + water + vanilla yogurt
- My Big Fat Greek Quinoa Salad 🙂
- Chicken Salad Sandwiches
Supper:
- Monday: Texas Toast Garlic Bread Pizzas / Side Salads
- Tuesday: Chicken Enchiladas / Fruit / Black Beans
- Wednesday: Turkey Bacon Club Sandwiches / Broccoli
- Thursday: BBQ Chicken Thighs / Corn / Side Salads
- Friday: Leftovers or Salads with Chicken & Hard Boiled Eggs
- Saturday: Fiesta Lime Chicken / Mexican Rice / Cucumber Salad
- Sunday: Meaty Cheesy Lasagna (with leftovers for Italian night the next day!)

It was pretty good! I made the fiesta lime chicken tonight and really enjoyed it.

We have been out of town and we have brought home some half portions from restaurants where we ate meals. So I have dinner for two nights. Mexican tonight and hamburgers for tomorrow. Well the hamburgers were from a family cookout but free food is free food. We also brought home some goodies from Byrds Cookie Company in Savannah. When you visit there, you need to stop in. They have free samples.

Yum!! I like your idea to come up with oven free meals this time of year. I’ve been adding grilled entrees to the menu as much as possible. I need to plan some dinner salads for next week. We have a lot of smoothies in the afternoon to cool off, but I’ll have to offer them at breakfast sometime. I bet my kids would enjoy the change.

We don’t have a grill! I love the taste of grilled food, but neither of us want to stand in the heat while our supper cooks. 🙂
