Chicken and Black Bean Hummus Dip

I know I’m super late to the hummus party, but I recently tried it for the first time! Since then, I’ve been looking for ways to incorporate it into my meals. I don’t really care for it as a veggie dip, but when I found some slightly spicy black bean hummus at my grocery store I knew exactly what I wanted to do with it! Here’s my favorite way to eat hummus – and if this defeats the point of eating it because it’s healthy…oh well. 🙂

This is a quick and simple dish that can be made for one person or for a crowd! Here’s the recipe:

Chicken and Black Bean Hummus Dip 

  • Black Bean Hummus 
  • Grilled Chicken (mine was marinated and grilled)
  • Shredded Cheese
  • Toppings: Chopped Tomatoes, Sour Cream, Cilantro, Lime Juice

In a microwave or oven safe dish, layer first three ingredients and heat in the microwave, covered, until heated through and bubbly. You could also pop it under the broiler until the cheese melts. Add whatever toppings you prefer – I found that a squirt of fresh lime juice really makes this dish perfect! Serve with tortilla chips.

  1. Welcome to the hummus party!! We love it as veggie dip, but Kevin does not. I’m thinking he’d love this black bean option since we love almost any mexican meal. Thanks for sharing – I’m off to hunt down some black bean hummus. Recently a friend told me that Aldi has the best price on hummus and carry it in several flavors. You’ll have to see if you like their options

    1. I’ve actually picked up a few different flavors of Aldi’s hummus – it is a great price, $1.99 at my location. Last week I grabbed the roasted red pepper hummus and I really enjoyed it!
