This month I decided I was tired of the things we were eating for supper. I’ve been making a lot of the same things and just needed a change! I tried four new main dishes and really enjoyed all of them – so much that I forgot to take pictures half the time. I’m basically always so excited to eat that doing anything else is a struggle (just like Kevin from The Office and tacos…). We also had burgers and club sandwiches for supper this month – two things I don’t ever think to put on a supper menu. They were both so delicious!
Recipe #1 – Skinny Chicken Parmesan Meatballs
My husband LOVES meatballs. Me, not so much. These were very moist and flavorful, so they were a win as far as meatballs are concerned (Paul really liked them). The recipe made enough that I was able to freeze half for later! I froze them uncooked and will just let them defrost in the fridge overnight before cooking.
Recipe #2: Balsamic Chicken With Roasted Vegetables
I hate that I didn’t get a picture of this, but it was SO good. I roasted mushrooms, red onion and grape tomatoes along with our chicken. The thighs were so flavorful that they didn’t need any dipping sauce. So delicious!
Recipe #3: Avocado and Crab Salad
Another winner from Skinny Taste! I followed more of the spirit of the recipe than the exact directions, but I would never have thought to make something like this on my own. I used imitation crab from Aldi ($1.67/package), avocado, tomato and cucumber and tossed it in the dressing listed in the recipe. This was such a nice change for weekend lunches!
Recipe #4: Simple Peanut Butter Granola
This stuff is so good with yogurt! The recipe makes plenty and it keeps well in an airtight container. I made it twice this month!

Yum!! My family loves burgers this time of year and I’ve always wanted to try to make my own granola. I usually end up just buying the boxed stuff from Cascadian Farms. I love peanut butter so I’m thinking I really need to give that recipe a try and mix in all of my favorite things.

It’s such a simple recipe – and it’s not anywhere near as sugary as the store bought ones. Although those are always good options, too. 🙂

I have the same problem of forgetting to take pictures of the food before I eat it. I made Ribs with Peach Barbecue Sauce, and I was going to post the recipe on my blog, but I forgot to take a picture until I was 3/4 of the way through eating it. Oops.

I love that you made the meatballs even though you aren’t a huge fan. I love them too, Russ could take them or leave them though. Summer is such an awkward season meal wise. With no soups and not as many caserolles, it gets old fast.
