We had some pretty delicious meals last week, so I decided to share that menu with you today in full confidence that these are family-pleasing recipes! 🙂
If you’re looking for a light and satisfying entree that doesn’t use the oven, try the chicken pasta salad I linked below. It was delicious and perfect for summer.
On The Menu

- Open-Faced Peach Sandwiches: I was inspired by this recipe, but simply layered toasted French bread, cream cheese and fresh peach slices. Yum!
Lunch:

- Kale & Quinoa Refrigerator Salad (recipe coming soon!)
Supper:
- Easy Oven Burgers/Home Fries/Corn, Tomato & Avocado Salad
- Hard Shell Tacos/Mexican Rice/Fruit
- Chicken Caesar Pasta Salad
- Shepherd’s Pie/Caesar Salad
- Supper at My Sister’s – she made: Roasted Lemon Chicken with Potatoes & Rosemary (YUM)/Cucumber, Tomato & Avocado Salad
- BBQ Chicken in the Crock Pot/Rice/Caesar Salad
- Leftovers

Summer is great for produce, and I’ve been up to my ears in cherries lately! While visiting my cousin, we had a ton of fresh fruits and veggies. It’s pretty much possible to make a meal from those alone. But grilled burgers and corn on the cob is tasty, too! And your chicken pasta salad sounds yummy!

Yum!! I love Shepherd’s Pie, but I’ve never made one. My kids are currently boycotting smoothies and it’s driving me crazy. Hope they change their mind about them soon because it was a great way to pack in the fruits and veggies.

I don’t always feel like having a smoothie either – sometimes the texture bothers me. I’ve decided that I have to use fresh spinach and that I don’t like blueberries in my smoothies.
