Menu Monday – Eating From The Pantry {1.6.20}


After eating out quite a bit over Christmas, I was happy to be at our kitchen table for supper all week long. This was the second week of a two-week Aldi haul, so we were eating from the pantry/freezer and finishing up the fresh produce I had on hand.

As you’ll see from my menu, things that last well in the fridge are bagged spinach, blueberries and broccoli. We also have plenty of apples, clementines and bananas for snacking or to throw into a smoothie. Here’s what we ate last week!

On The Menu


  • Avocado Toast
  • Yogurt and Blueberries

  • BBQ Pork Sandwiches

  1. I made your Southern Green Beans and oh my goodness they were good! I’m not a fan of green beans but my husband is so I thought I’d give them a try. We loved them and I’ll be making them again for sure! Thanks πŸ™‚


  2. Yum! We’ve been having avocado toast for lunch and are also trying to use up food from our pantry and freezer this time of year. I’ve got spaghetti, breakfast for dinner, Pesto gnocchi and a pepperoni pasta dish on the menu this week. I am looking forward to getting back to cooking more now that the holidays are over.
