Happy Monday! I haven’t done one of these posts in a while, and now that we’re into the cold weather “comfort food” stage I thought this was a good time to share another weekly menu!
What are some of your favorite fall recipes?
On The Menu
Breakfast:
- Pumpkin Pancakes
- Mini Omelets (I prefer to make these ahead and store in the fridge for up to a week – I don’t care for the way they taste when frozen and reheated)
- Peanut Butter Toast
Lunch:
- Leftovers
- Deli Sandwiches/Apples/Fruit Snacks/Banana Bread Muffins (For Paul’s workday lunches)
Supper:
- Quick & Easy Beef Stroganoff with mushrooms/Egg Noodles/Peas
- Ham and Cheese Sliders/Tossed Salad
- Sticky Chicken/Green Beans/Rolls
- Chicken Fajitas with peppers and onion/Chips & Salsa
- Meatloaf/Crash Hot Potatoes/Corn
- Pizza/Tossed Salad
- Leftovers
We’ve had pumpkin pancakes for dinner two weeks in a row! Pretty addicting! 🙂 I agree – I’ve done the mini eggs in the fridge instead of the freezer. They taste so much better.

Hi! Popping over from the Menu Planning Linkup! I think that I might mix up some breakfast burrito mix (Eggs, salsa, peppers, spices) and just throw them in a container to reheat in the morning. Maybe then I would actually eat breakfast! Great idea! I also love that you share breakfast, lunch and dinner. I need to start planning ahead on those things too!

My husband loves to eat eggs for breakfast, but I don’t have time to wash a nasty scrambled egg pan in the morning. This was my solution! 🙂 Thanks for stopping by, Meg!

I’ve been wanting to try to make eggs ahead and just reheat them in the mornings. I don’t think I’d like them frozen so I’ll have to give your refrigerator trick a try.
