Having access to fresh, local peaches is definitely my favorite thing about summer in South Carolina. There are so many delicious ways to consume them, but today I’m going to share five of my favorite summer recipes that feature the glorious peach.

#1 Peach Galette

This is a delicious recipe that’s hard to mess up. I don’t care for finicky, complicated baking recipes so this one is right up my alley. As the recipe says, you can even use store bought pie crust! I’ve made this galette with store bought crust as well as with my favorite no-fail pie crust recipe.

#2 Individual Peach Cobbler

I love my mom’s recipe for these individual cobblers – it’s also great with fresh blueberries. You make them in individual ramekins, but I usually scoop it out onto a plate before eating.

Tip: If you don’t have oats on hand, you can also use the same amount of oatmeal from an instant oatmeal packet. I’ve done these with instant cinnamon oatmeal and it is delish!

#3 Strawberry Peach Smoothies

You can use fresh or frozen peaches in this recipe, so it’s a great way to enjoy the flavor of peaches year round! I also love that you can make this one in the most basic of blenders, like the simple one I have.

#4 Peach, Prosciutto and Parmesan Salad

This is a great salad to serve along with brunch, but it really goes well with any meal. I love salads with fruit and this is such a great one! Aldi typically has peach and strawberry flavored vinaigrette dressings this time of year, and I keep those on hand instead of making the dressing from scratch.

#5 Slow Cooker Peach Cobbler

YUM. I add a pinch of salt to the topping mixture. This only takes about two hours to cook in my crock pot. As recommended in the recipe, I line the lid with a paper towel to absorb the moisture and that works really well.

So tell me – what is your favorite way to eat peaches? I’m also a big fan of eating them all by themselves. 🙂
