I planned my menu weeks ago knowing that I would work in the office Monday-Wednesday this week and wouldn't have loads of time to work ahead. I'm taking Ina Garten's approach and not making everything from scratch!

I am not great with pie crusts -that's why I'm sharing this recipe with you! I've mentioned this pie crust lots of times before, but I felt like I needed to highlight it as we go into the holidays. My mom taught me how to make pie crust, but my attempts never turned out like hers. We all have probably made pumpkin bread recipe that uses a cake mix, a can of pumpkin and a egg...but this recipe might keep you from ever doing that again. It's that good. I love that you only need one bowl to mix everything together! Plus, the outside of the bread gets nice and crisp without drying out the inside. You won't regret making this bread!
